How to Make Millionaire Shortbread With Smart Cookie

MasterChef alum, Elise Mayfield — aka Smart Cookie — shows you how to make Millionaire Shortbread, a rich, buttery triple-layer bar cookie that she describes as "a giant Twix bar the size of a jellyroll pan."

"I'll tell you why it's called Millionaire Shortbread," says Elise. "It's because it's got lots of fancy ingredients and it sounds real fancy, but it's actually very simple to make." Elise shows you how to make the buttery shortbread base topped with a layer of chewy caramel and finished with melted chocolate and a sprinkling of crunchy sea salt flakes.

  • The shortbread dough (all-purpose flour, rice flour, sugar, butter) should look and feel sandy after you process it.
  • You must use a 15x10 jellyroll pan for this recipe. No, it's not the same as a cookie sheet.
  • After you top the warm shortbread layer with the warm and gooey caramel layer, let it chill in the fridge for 30 minutes before topping with melted chocolate and sea salt.
