As promised, here’s the recipe for what I called “Black Magic” crackers in the Horrible Hand video. I’ve rebranded them “crisps” since, as I joked, nobody makes their own crackers. But, no matter what you call them, they are incredibly tasty.

We could not stop eating them and now I’m glad I bought such a large bag of black sesame seeds in the bulk food department. 

Notes From the Chef

  • The batter is quite simple to mix up and can be used to create crisps of varying shapes and thicknesses. While they’re still hot and flexible, they can also be pressed between two bowls to make edible cups, which can then be filled with some sort of sesame seed friendly filling.
  • Just be aware that the smaller and thinner you make them, the faster they cook, so keep an eye on them.

Ingredients

  • 2 large egg whites

  • 3 tablespoons vegetable oil

  • 1/4 teaspoon fine salt

  • 2 tablespoons white sugar

  • 1 pinch cayenne pepper

  • 1/3 cup all-purpose flour

  • 1/2 cup black sesame seeds

Directions

  1. Preheat the oven to 350 degrees F (180 degrees C). Line a baking sheet with a half sheet-size Silpat nonstick silicone baking mat (16 1/2x11 1/2-inch).

  2. Whisk egg whites, vegetable oil, salt, and sugar together in a bowl until sugar is dissolved, 30 seconds to 1 minute. Whisk in flour until smooth.

  3. Blend in sesame seeds with a spatula until evenly mixed, and transfer to the Silpat-lined pan. Spread out into a thin, even layer, leaving a 1-inch border. Tap the pan a few times on the counter to further level the mixture.

    Chef's Note:

    Alternatively, for round crisps, drop mixture by spoonfuls onto the Silpat mat, and spread into thin circles with the back of a spoon, then bake as directed below.

  4. Bake in the preheated oven until golden brown, about 20 minutes.

  5. Let cool completely, about 20 minutes. Peel the sheet of sesame crisps off the mat, and break into cracker-size pieces.
