I have made this recipe three times in five weeks and my family, who is very picky, absolutely loved it. It is very moist and difficult to tell the difference between this baked chicken recipe and the traditional pan fried chicken cutlets (except no grease!!!). Use a rack between the chicken and the pan in order to let the air circulate through while baking to prevent a soggy bottom. A definite must make recipe!
Delicious! Finally baked chicken that my husband and kids really enjoyed! Very close to fried in the pan but much more tastier! I did not have Dijon mustard so I used honey mustard instead. Totally recommend making the recipe!
