This turned out very good. I did have to add more seasoning and I did use red bell pepper instead of green. My husband really loved this and has informed me that I can cook it again. Also, as others have said, be careful not to scrape the bottom of the pumpkin too hard. Luckily ours was still in the pan when everything leaked out.
Took about 15 minutes longer to cook for us. We also decreased the amount of onions, but that's personal taste. Was very good and my husband has informed me that I can make it again.
The three years I was dating my husband, I would make him cornbread from Jiffy Mix and tell him it was homemade. Well for the first time since our wedding and moving in together, he decided he wanted some of “my” cornbread. I refused to admit what I made in the last wasn’t actually homemade so I used this recipe. He said it was the best i have ever made! Whew! My secret is safe!
