Sooooo good! I substituted bone-in chops, jalapeños, and thyme from a bottle. Other than that, I followed the recipe and the technique for creating the pocket. The cook time was nearly spot on at 15 minutes. The meat was tender and juicy. The filling was sweet, savory, and had a hint of heat/spice. I tasted the completed sauce from the pan and I was concerned it was going to overpower the plate and I was clueless about how to "season it to taste". I left it as it was and served it, fingers crossed. It was perfect. My mother in law is a retired professional cook. My husband said I made the best pork chops that he has ever eaten in his life. My kids, ages 6 to 22, are difficult customers. Not only did they all eat dinner without prodding or complaint (once they got started), they cleaned their plates!!!
Thank you, Chef John!
I followed the directions as they are and used parmesan cheese. I'm not sure what went awry. The cheese melted with time, the sauce didn't thicken and was very gritty. Before serving, I added some garlic herb shrimp. The sauce flavor was good. The texture and consistency were misses.
Say goodbye to your steak sauce. This seasoning and a good steak are all you need!
The recipe makes about 1 cup of seasoning for 6 steaks. The seasoning goes on pretty heavy, but we tend to use thicker cuts of meat, so the seasoning doesn't overpower the steak. We arent typically making 6 steaks at a time, so we keep the extra seasoning in an airtight container.
Yum! Yum! Yum!
I used this recipe to make 8 mini loafs. I used 3/4 cups of sugar instead of the full cup. I baked them for 20 minutes, which is standard for my pan/oven. With this recipe the bread came out dry and not very flavorful.
I didn't have plum tomatoes, so I used a 28 oz can of crushed Italian style tomatoes. I also added about 1.5 t brown sugar and 5 oz of grated Parmesan cheese.
It was hit! Even our 5 year old enjoyed it. If I were to make it again, I would probably cut out the crushed red pepper. I would also try it with the plum tomatoes as written.
