This soup came out incredibly delicious. I had a ham bone that I was saving in my freezer and it worked quite well with this recipe.
I did swap the celery with asparagus. I also used an immersion blender once the potatoes were soft and made it all into a creamy chowder consistency. This eliminated the need for the water/flour step. It thickened up quite nicely and also "hid" the veggies for my picky daughter (and picky husband). I added the cream still, along with a little shredded cheese.
I will definitely make this soup again.
This has become my go-to recipe for pizza dough and sauce. I always mix up the veggies and cheeses, but definitely a keeper for my family. I do like to add a little rosemary into the flour mix. I also take the sugar from the flour mix and put it into my yeast mix. I find it helps it foam up much easier (learned from making bread many times over).
This recipe was great and utilized a few things that would have gone bad if I didn't use them soon (namely ham and potatoes). The only thing I did differently was add a bit more flavor for fear of my toddler not liking it. She definitely loves her spices. I added a bit of garlic powder and chili powder to the ham and onions as they were cooking. And I sprinkled on crushed rosemary before the bread crumbs. My whole house smells like rosemary potatoes (YUM!) and the taste is phenomenal. Definitely making this one again.
I really tweaked this recipe because it was the night before grocery shopping and I made do with what I had. That being said, this was the perfect recipe to sub in what I did have and I'd love to actually try the real thing lol. I used cubed up chicken instead of turkey. I only had a small can of pumpkin and like 5 tortillas. Black beans instead of refried. I decided to make this into a casserole instead. I shredded the tortillas on the bottom, added the meat mixture, then a layer of the tomato mixture, then a layer of cheese. I did it all again, except I used the last of a bag of black bean tortilla chips in place of tortillas.
It came out sooooo delicious.
I learned recently from a cookbook to take my can of chipotle peppers and blend it all up really well. Then save it in a container in the fridge. You can take it out a Tbs or tsp at a time. I used a Tbs and it was nice and smoky with a little heat. Use more for more heat.

Eating this as I type. The sauce came out soooo delicious. I may have to double it next time since my pasta dried out a bit and it soaked up a lot of the sauce and it wasn't so creamy anymore. Doubling and making my pasta a bit later. I added some chopped garlic to the butter and cooked sausage and mushrooms in a separate pan, adding them in with the tomato sauce. Super tasty.
For any who think the vodka is too much: I used super cheapo vodka (on a budget lol) and followed the measurements exactly. Also followed the cooking directions exactly, even using a timer while simmering both times. During the first simmer, I was a bit worried as the steam burned my eyes with alcohol. But after both simmers (and the small amount of cooking in between to get it to a boil and such) the vodka taste was there a bit, but not the alcohol. Just be sure to give it plenty of time to evaporate away. If it's still too alcohol-ey, cook it longer, making sure there's steam coming off of it, as that's where the alcohol leaves.
I'll definitely be making this again.
I've made this recipe numerous times, both in my oven and in my slow cooker. I always make it when my local grocery has roasts on special that come with free bags of veggies. It is a little sweet (I've made it with both apple juice and the frozen concentrate) but I don't find the sweetness overpowering at all. I dump it all in the slow cooker and after an hour or two of cooking, I add in carrots, quartered onions, and diced potatoes. Then I just cook it until the meat falls apart. It's so delicious. As per another review, I also used my leftovers the first time to make stew and dumplings. I found the recipe for that on here was too many steps for what I had, so I just reheated the leftover frozen pot roast with all the juice and veg and then made dumplings to drop in. It came out super delicious. Great repurposed meal as well. Thank you!
