I followed the recipe to the letter except for the basil, as I didn’t have any fresh, and there is nowhere to get any at 3 am. And I subbed strawberry juice for the water. I don’t know how this would have worked out with the basil, but Mmmmmmm! This is good stuff.
These are excellent. The cheese and the thyme complement each other very nicely. Mine did not really get crispy, they were firm, but a little bit chewy, which is fine with me. I followed the recipe to the letter and it worked out fine.Next time I am going to add some garlic and onion powder and a bit of cayenne. Then I think I’ll try some with old bay.
It took me two nights to make this because I wanted to make it as close to the recipe as possible. I thought I had everything before I started but found out half way through that I only had enough powdered bullion to make one cup and I was making the recipe X-4. I subbed the rest of the bullion with one C vegetable and two C beef bullion. I am certain that it would have been perfect as per the recipe but this was awesome. This is a go to, flavorful and filling meal that is excellent for a bunch of guys that have been working hard all day, or even a family sit down after a long day at the office, job site, or school. I would recommend this recipe for anyone who love a good heart warming meal.
I only gave this recipe four stars because first of all I don’t like tomatoes in my corned beef hash. I had some grape tomatoes that I was making salsa with and tried the recipe as written only cut in half and used corned beef that I cured and cooked myself. It was good but I truly did not like the tomatoes. Then I made it again still using REAL corned beef and without the tomatoes. It was of course delicious. And yes the over easy egg on top only made it that much better.
