This recipe has so much flavor! I substituted scallions for the white onion and portobello for regular mushrooms. I left the seeds in while cooking by accident, so the squash didn’t come out as stringy as hoped. The taste was still delicious! I will make this again.
This recipe was super easy and came out delicious. Three homegrown jalapeños, extra cilantro and extra garlic was added for a bigger taste punch. The key is to have nice ripe hass avocados. This recipe is a keeper for sure!
