I always use this recipe for onigiri (rice balls), wrap with a strip of nori and, if desired, stuff with less than a teaspoon of seasoned tuna for an on-the-go alternative to tuna sandwiches! Make sure you add the seasoning while the rice is still warm, to absorb as it cools. Adjust to taste.

I’m going to try it again, on the BBQ this time, indirect heat. In the oven, it came out just like the stuff from the Chinese restaurant, but not sliced🤣! It freezes exceptionally well, so you can have like 1/4 pound portions for fried rice or ramen!

This makes air-fryer chips as great as you make with deep fat! When I poured over the boiling water, I added 1/4 tsp of baking soda—not enough to taste, but it adds crispness. Another Chef John fave in this house.

Not as addictive as promised. You really need a thermostat controlled deep fryer, not a pan on an electric burner. I used the rest of the batch, spread on toast triangles, in the airfryer at top temperature for 7 minutes. Quick and easy, serve with sweet chili sauce for dipping.

This dressing especially, is delicious, and this salad makes lots, but it disappears very quickly! Add your favourite antipasto ingredients, to make it your own, but don’t forget the anchovy fillet!!!

Delicious, and easy for a bread! I used my food processor, following the pizza dough method, for this very similar, but unique, flatbread. Very well worth it, Chef John, as usual!
