First off, use real crab meat. I've made this a few times, but change it up a bit to make it healthier. I use fat free cottage cheese instead of heavy cream. It takes a little longer to bake, but tastes amazing. And I sub swiss in place of monterey.

Add ground up pistachios to the bread crumbs and add ricotta between the layers, but top with the mozzarella/provolone.
