I used evaporated (Carnation) milk instead of regular milk and added ground ginger as well. Best eggnog I’ve ever had in my life!!! Something magical happens when you refrigerate it overnight. It doesn’t taste the same but it’s so amazing!
Good if you’re looking for a not too sweet and sort of healthy muffin (I’m saying “sort of” because though it’s low in sugar, it still has tons of flour). They were so moist that nobody could get the paper cups off them to eat them. They also went bad after staying on the counter for 3 days.... I added cranberries to them and got a whole bunch of compliments for that. I think that next time I make muffins, I’ll probably stick to a more traditional recipe with sugar and butter.
