AWESOME!!!!!! .... So I also added fresh spinach and a ¼-½ C chicken broth and simmered it just enough to soften the spinach and warm tomatoes. Instead of feta, I used fresh grated Pecorino Romano and then topped it all with SMOKED sea salt!!!!!! AWESOME!!!!!!! And easy

Oh my gosh! The depth of flavor! And the layers of flavor are amazing! Is going down as one of top three all time soups! And since I'm both gluten and dairy intolerant this soup is unbelievable. It rich and creamy without the added calorie (or bloating) from dairy. Whomever concocted this is genius. For an added variation on day 2 of leftovers, I added smoked goat cheese (since I can have milk from every OTHER animal except a cow LOL).
