To simplify, I substituted a jar of spaghetti sauce, and soaked lasagna noodles in warm tap water while preparing the meat sauce, instead of boiling them. I used nonfat cottage cheese instead of ricotta to reduce calories. I added fresh spinach. My guests complimented the dish.

So simple and delicious! Tasty savory muffin. I was afraid I added too much kale since I wasn't sure how to measure it, and although I think I used much more than the recipe called for, it still came out delicious.
