Absolutely delicious! I soaked my mandolin sliced potatoes in water for a good hour then rinsed and dried well. The only addition I made was to add a pinch of nutmeg. Using a good quality cheese is a must. The potatoes were not par boiled and I cooked an extra 10 minutes and broiled for a few minutes at the end. The potatoes were tender but not at all mushy.
I made this for dessert on a beautiful Fall Sunday. They were so fun for my daughter and I to make together! After the first half hour I covered in foil. They came out beautifully! Just delicious as is or even better with some vanilla ice cream!
Lovely as is! I sometimes change it up with either bulgar wheat or couscous and occasionally will add chickpeas. I have used dill as well if it’s available in my garden.
