Yummy, my guests loved it. I used brown rice instead of white, ommitted the spinach and added chopped carrot. For the dressing, I used my standby Oriental dressing recipe from the "Oriental Cold Noodle Salad" recipe on this site (adding in 2 TBS of chopped fresh ginger) Excellent, Healthy and really tasty!
I made the onion filling and half-and-half/egg mixture as directed, but added a shot of Worcestershire Sauce and some paprika to the liquid and a lot of love to the preparation. I did not put it in a cracker crust, instead I layered the onions, and about a cup of swiss cheese in a casserole pan (I made three layers). Topped it with the crushed ritz crackers/ Turned out YUMMY and house smelled so good while it was cooking.
Made these for my BF and they turned out the perfect consistency and crispiness level. I added 1/2t of Vanilla and next time I will increase the peanut butter a bit.....
This turned out delicious. I increased the rhubarb (I used fresh) by 1 cup; cut down the sugar to 1/3 cup; add juice of one lemon to rhubarb mixture. The crumb topping was great, although I think I will add almonds to this next time. Great recipe, super easy, wonderful with ice cream. I will make this again!
