The recipe is good. I didn't have some of the ingredients, Jamaican curry, and basmati rice. I used regular curry and jasmine rice. Be careful on the rice preparation as it can burn, use your judgement and experience on rice prep. I added 1 tsp pepper, 1 tbs garlic powder, and 1 tbs onion powder. It came out well. Will be using it again.
Did two racks with this recipe, one with barbecue rub and sauce, and the other I did with a Jamaican Jerk sauce/marinade (my barber said to try it on baby back ribs). I cut the ribs into about 5 bone sections. I did 250°F for 2 1/2 hours because the ribs were right out of the refrigerator. There will be a lot of liquid to drain, so be prepared. The basting every 10 minutes helped with determining doneness. The ribs on both sets fell off the bone. Good luck.
Great recipe, and easy to make. Mixed the sauce ingredients after the meat/onion/garlic cooking in a bowl to blend better. Only used one Jalapeno. My 11 yr old liked it with the jasmine rice. He's not a very picky eater but doesn't like spicy food. The family liked it, so it will be going into the rotation. Thanks for putting this recipe online.
Great recipe. Used instant mashed potatoes instead of the recipe listed one. Other than slight spice additions, recipe is solid. I will definitely be using this again. Family loved it.
Made the recipe slightly adjusting the spices (Mrs. Dash instead of season salt). Turned out great, and the family likes it. Will be putting in the dinner rotation.
