One of the best “King Ranch Chicken” recipes I’ve tried. I used a rotisserie chicken and boiled the bones in store bought chicken broth which added flavor. I sautéed the onion and bell pepper in butter and bacon fat then added a couple tablespoons of chunky style salsa. I added the rotel tomatoes then remaining sauce ingredients to my large skillet and simmered for a few minutes before preparing the casserole. Oh yes, I substituted dried cilantro for the oregano (I prefer the southwestern herb) and added extra sour cream. It turned out PERFECT!!
