6 Stars! One of the best recipes ever! Really, I would not change anything. Whole family LOVED it. If I’m in a rush next time, I’ll try with pre cooked rotisserie chicken and chicken stock and skip the 1 hour to simmer the chicken.

Delicious. Simple and elegant. I used a boneless 2.75 LB Pot Roast cooked in slow cooker on high for 5 hours. Served with wide noodles and horseradish. Savory. Leftovers a must for next day sandwiches. I added Red Pepper Flakes, about 1 TBL on top of roast prior to adding the mushroom onion mixture. Will make again. And again.
Wow. Delicious as well as quick and easy. Love one pan dishes. I followed the recipe exactly except that I tripled the capers. Served on a bed of arugula. Came out perfect.
