Yes, I will make this again! I am trying to keep an eye on my added sugar intake, so used only 1/2 the brown sugar and loaded up the skillet with more veggies - zucchini, red bell pepper & onion. This is an easy & quick recipe that produces really tasty tofu!
I used an additional egg since this was my entire dinner and sauteed about 1/4 of a medium vidalia onion with the zucchini. Used lemon pepper for the seasoning and topped the eggs and zucchini with salsa. It was delicious and a good healthy quick meal.
Wonderful recipe for using up an excess bag of coleslaw mix that I purchased to make slaw for a potluck. I used homemade chicken broth, added the can of Italian-style tomatoes UNdrained, and also a splash of balsamic vinegar for a touch of sweet/sour flavor. I noted one reviewer's comment to add white beans for protein - will probably try that next time.
I enjoyed this tasty combination very much. I did follow other reviewers suggestions to cut back on the cayenne and add cinnamon. I also used roasted, salted pepitas instead of the pecans.
I had leftover cooked white rice and the weather is just too hot here to be boiling a pot of water for pasta! :) The combo of soy sauce, garlic and sesame oil flavors worked well with the Spam. I also added some chopped broccoli to make it more stir-fry-like and add some healthy green.
I already had cooked ground turkey in the freezer, so just added the spices and water and simmered as directed. The brown sugar & vinegar added a subtle flavor that I really liked! I used the meat to make a salad of leaf lettuce, grape tomatoes, chick peas, avocado, cheddar cheese, cilantro & ranch dressing. Have saved this recipe to make again!
