This is the way I remember beef stew tasting when I was a kid. This is a very good base recipe. I substituted V8 reduced sodium vegetable juice for the full-sodium tomato juice and cut back the amount to around 2 - 2.5 cups. I did not decrease the beef broth. As a result, I did not have a lot of juice left over after the meat and veg were gone. It all came out even. I also used no-salt-added diced tomatoes. Instead of the package of frozen mixed veg, I added chopped carrots, green pepper, and celery along with the potatoes. I kept the leftovers from supper in the crock pot overnight on warm and it tasted even better the next day for lunch.
I love the coconut and oatmeal combo. I switched it up a bit by substituting 2/3 water, 1/3 Trader Joe's light coconut milk for the soy milk. I also added 1/2 cup fat free powedered milk. I hate to drink powdered milk but it adds creaminess if you cook with it. I also find that the oatmeal is creamier if you add the oats to the cold liquid(s) and then bring things to a boil.
