My cookies turned out great. I did 3x the recipe for a cookie exchange at work. Only used 1 cup of cranberries per batch, as recommended. I also switched the amounts needed of almond extract and vanilla extract, also recommended by another reviewer. Zested a whole navel orange; I might try more next time. Then baked until slightly toasted on the bottom — it was my first time making it, and I'm very satisfied with the result. Simply delicious!
These were very good! I followed the recipe (peanut butter version) completely except for these changes: used 2 bananas, used some chocolate chips and some chocolate chunks that I had on hand, and 3/4 tsp salt as recommended by another review. I made 49 cookies from this one recipe, no adjustment to servings! Flattened cookies before baking as was recommended and baked each batch 11-12min. The cookies were well received by family, friends and coworkers. Next time I'll try the regular version without peanut butter. Very fun to make!
Very good! My boyfriend and I made this for dinner recently and we really liked it. Used penne pasta noodles instead of linguine. Also didn't have Cajun seasoning but had most of the spices except for garlic powder and lemon pepper, so we just chopped up garlic and added some lemon juice (probably not the proper way to make up for those spices, but still tasted good). I had an overripe tomato too, so I diced it up and tossed it in with the rest of the veggies. My boyfriend also added extra cayenne pepper and black pepper, so a bit hotter than what's called for -- still good! I'll definitely try making this again.
