Delicious and extremely simple to make. Do not cool for longer than the recommended 10 minutes as the cake will stick to pan. 7-8 minutes should be plenty.
In hindsight, i would've blanched the cauliflower first to shorten cooking time & improve flavor. I also felt that something was missing and i added a dash of cinnamon during cooking/tasting. Also added a small semi hot red pepper (whole). The cinnamon really perked up the spice mix. I know this is a dry dish, but to keep potatoes and spices from charring i added not only a lil water but also enough yogurt to moisten. I am happy with the result.
Bland but otherwise a keeper. Next time, I'll add Italian seasoning or another herb combo as this seriously needed at least salt! I liked that this was baked. I broiled it in final moments to crisp. Goof way to use zucchini!
This was the biggest hit at the Christmas party! I couldn't believe how much everyone loved it! I used old french bread and it turned out delicious! Highly recommend!
