So easy, tender and delicious! We had tacos the first night and enchiladas the second. Will definitely make again!

We loved this soup. I made it vegetarian using Impossible meat and vegetable broth. I made according to the recipe, adding garlic with the vegies. Made the rue, added the milk and let it thicken. It was a perfect consistency. I added cayenne to my bowl, but my family said they liked it without. I will definitely be making this again!

Best corned beef I've ever made and the house smelled heavenly!

This soup was very good. I used Beyond Sausage and mushrooms instead of zucchini. I also used a can of tomatoes instead of fresh and added a little spinach because I had it on hand. Family enjoyed the soup. Thank you for the recipe!
