I used half an onion and one red bell pepper; I doubled the cumin; I added a can of Rotel fire roasted tomatoes with green chili. The Rotel really gave it a kick; you could use regular canned tomatoes for less kick. This is now going to be a staple for me!
I made this as directed but adding some of the pasta water as other reviewers suggested. The red pepper flakes add heat but not flavor - was sort of bland. I added lemon pepper to my bowl and then was satisfied with that. I will make again but will up the garlic and for myself would add sautéed onions/peppers/mushrooms.
You cannot believe how tasty this is given how easy it is! Made as directed, then at the end threw in a little fresh cilantro as I had some on hand. But I tasted it before I did that and it's great as is! Will DEFINITELY be making this again!!!
SPOILER ALERT: I MADE CHANGES! Looking to lower my cholesterol through diet, thought I’d give this a try. But cooked carrots make me gag, and they’re high in sugar, so I subbed in a pound of butternut squash. Added garlic powder, onion powder and rosemary to the water. All was going to plan until I realized we were out of horseradish; subbed a heaping teaspoon of minced garlic from a jar. Subbed olive oil for the butter. This actually was surprisingly tasty and I will make it again!
