I used less sugar for the filling and adding some more lemon juice than 3 tablespoons would definitely be good. I intend to experiment a bit more by adding new ingredients like others suggested,e.g. extra egg yolk to the filling and some almond flour to the crust. And why not mixing some maizena with the flour in the filling. To be continued…

I adjusted the flour. I used less than 5 cups. I also dipped them in about a cup and a half hot water with 2-3 tbsp of Baking soda. They turned out beautiful and delicious. I brushed them with butter when taking them out of the oven. Some I garnished besides ground sea salt also with freshly ground black pepper. A matter of taste and preference.

It is a great recipe. You can vary a bit and it is always a success. Brush some egg yolk on top ans sprinkle some sesame seed or sugar for a perfect crust.
