We liked it. I didn't have apricot preserves, but did have pear preserves which I used--go figure. We don't like desserts overly sweet, so I cut the sugar to 1/2 cup... I would use a similar amount next time too. Would make again.
Way too sweet for my taste and the butter and brown sugar seemed to mask the butternut flavor. I think this recipe has potential and I will try again, and cut the sugar in half.
Pretty good and most of the guests seemed to like it. My only change was to add a diced red onion which I think was a good addition. However, there is way too much oil in the recipe. I had to drain the salad before serving. Next time, I might try to season the salad myself. The ingredients in Goya Salad & Vegetable Seasoning, in order, are: salt, MSG, dehydrated garlic, tricalcium phosphate (anticaking agent), pepper, turmeric (color).
