Surprisingly, I had everything I needed to make the dish. It was wonderfully fragrant and delicious. I didn’t make any changes and can’t imagine any it needs. Just make it.
It wasn't as exceptional as I've come to expect from Chef John. While it's still a good pasta salad it's a bit too sweet for my taste. It reminded me a bit too much of the standard stuff you buy at the grocery store.
Besides scaling the recipe for 5 servings, I followed the recipe exactly. It was very rich and cheesy. It was not bland, as some have said, and I liked it a lot.
I made the "Philly" using 80/20 ground beef, (that's what I had on hand) and served it over a bed of lettuce. I know it's not the original recipe, but the flavor was the same, without the calories and carbs associated with the bread. Update: With the leftovers, I added a diced/sauted jalapeno pepper and about a teaspoon of red pepper flakes. It really kicked it up a notch!
Pretty good stuff. After making it as written, I decided to add an additional TB of mayonnaise. It didn't change the flavor much, but made it a bit less dry.
This is my first time ever making my own tortillas from scratch. I watched the video a couple of times to make sure I had the right consistency. They were perfect. They were easy to make and wonderful to eat. I'll be making my own from now on.
