I added about 5 cloves of garlic and a sliced large whole onion to the sauté pan first. Cooked that with chicken and several stalks of diced celery. Used thyme and other spices. Dumped in baby potatoes and lots of chicken broth too plus about 1 cup of dried figs cut into quarters. Delicious!
Oops! Posted too soon! I added 8oz chopped roasted red pepper as well as a mix of scallion and yellow onion. I substituted 25 oz Alfredo sauce for tomato and added three layers of a mix of 18 oz ricotta with fresh chopped parsley and 1 egg mixed in. Also used mozzarella for an extra cheesy lasagna.
This recipe is good, but lacks a little punch. I put in about 1/2 cup brown sugar (in addition to all of the ingredients listed here), & added about 2 tsps cinnamon to the batter. I layered fruit on the bottom first, then poured over the batter, then layered fruit on top again. I drizzled the last remaining bit of batter over the cobbler and topped it off by crumbling 1 TBSP brown sugar on the top. Delicious! (I have also done it by adding blueberries to the peaches). Try this version. I think you will like the kick!
