We found this one when searching for low calorie recipes to lose some Covid weight. We’ve made it as is, which is very good, but we’ve done some modulations to make it more “stew” like.
I’m rating the recipe as written. As stated in other reviews, you do need to add more flour and more peanut butter. I did a 1/2 of each. I also add half a package of instant vanilla. It helps keep the cookies shape and adds a really great vanilla taste. I know every oven is different but my cookies needed 12 minutes at 350. With these modifications, I thought these cookies were delicious. I also posted a photo.
I'm rating this considering the actual recipe. This one was way too sweet!! I made it a second time, using less tomato paste & less sugar - while adding more water and it turned out much better.
Family of 3, we all thought this recipe was great. I did add less salt, increased the amount of mozz cheese, used spicy sausage & added some nutmeg. I will definitely make this one again. I have to wonder if the people who dislike this recipe, used poor ingredients or made it incorrectly. I used organic canned tomatoes with low sodium and fresh cheese that I grated. I think the pre-sliced or grated is gross. Maybe that made the difference.?.
I used this recipe for a football party appetizer. I always get nervous to use a recipe for guests without trying it myself first. I made this recipe as is, but added about a half tsp red pepper flakes.. we like things spicy... it was awesome & everyone loved it. I then used the same recipe for our Christmas party, and everyone who ate it was raving. You cannot go wrong with this one! Thank you!!!
