I used three large ripe bananas instead of two, doubled the rest of the ingredients and added a teaspoon of organic fair trade Vanilla along with a sprinkle of Cassia Cinnamon. I think next time I might substitute a 1/4 of the all-purpose flour with whole wheat flour. They were delicious! :-)
Decent cookie. Not the best I've ever made, but my daughter likes them and that is what really matters. I probably will try a different recipe next time, as these just don't kick it up for me.
I used a Magic Bullet and did batches of 1 cup each. It took about a minute per batch and the consistency and taste is exactly that of store-bought confectioner's sugar. Absolutely brilliant - will use every time from now on! PS - Someone below asked why there is cornstarch in it. It is because that is how confectioner's sugar is made and it will affect the outcome/consistency of your icing, etc. if you leave out the cornstarch. It is a necessary ingredient.
