I really liked this, but I wanted to make it more substantial so I added some broccoli. I cooked the bacon, then removed it from the pan. Then I cooked the broccoli in the bacon fat, salt, pepper, and garlic. Then I threw in the beans and greens, turned off the heat stirred for about 2mins, added the lemon juice, and stirred again. I served the bacon on top to keep it crispy. Definitely do not skip the lemon, it adds a nice, bright flavor!
Really great side dish - I used dried thyme and added one jalapeño (omitted the red pepper flakes) to add some color and heat. I also added two more carrots. This could be a great meal if you add some roasted sweet potato and/or grilled mushrooms!
Some reviewers complained about the lentils being mushy. To prevent this, check them at 30-35mins. Mine were ready to eat after only a half hour.
If you make the soup, you must also make the topping! I didn't have parmigiano on hand, so I threw in some blue cheese crumbles instead. Do yourself a favor and try it with the blue cheese!
Wow. I was skeptical, but this was awesome with a few adjustments to the marinade and cooking method. I made this amount of marinade for 1lb. of salmon, not two, and it was perfect. If you make 2lbs. of fish be sure to double the amount of marinade. I highly recommend cutting the amount of olive oil in half and adding a bit of grated ginger as well as siracha. As others have suggested, bake at 350 for 15 mins. and then broil for 5-7 mins. All of the flavors will caramelize, leaving the fish extremely flavorful and moist.
It definitely needed some cayenne to kick up the heat! I also added some broccoli to make it a bit more hearty. I bit hit at the Father's Day BBQ, and I am the only veggie!
A good, light dinner. I felt like I needed to add some thickness to the sauce so I added a handful of whole wheat bread crumbs and it was a great texture. I definitely added quite a bit of garlic, some chili powder for a kick, and squeeze of lemon juice. I also added some sliced red bell pepper for some color.
