I couldn’t believe I had all three seasoning packets this recipe called for! (When did I even buy that Italian dressing packet??) It was so easy to follow this recipe. I forgot to salt or pepper the meat, but it didn’t need it. So much flavor! I even added a big pile of halved potatoes (those bite-size ones) on top of everything, and the flavor was still strong. I’d recommend a side of crusty bread to sop up the delicious gravy left at the end! I slurped up the last few bites of it right off the serving spoon because it wouldn’t fit in the leftover container. Yum!!! I ran out of time before dinner to cook the meat long enough to be falling apart tender, but I’ll plan better next time. :)
This recipe is one of our family’s long-time favorites!! I’ve never made it with the pimentos, but it’s always been fantastic anyway. I’ve also made it using oat flour, which for some reason seems to stick better to the chicken.
I’ve made this recipe a few times and this time used the given amount of lime juice. I really thought the beef flavor ended up a little on the sour side, unfortunately, and my kids complained they didn’t care for the taste. My only change was the peppers - we can’t do spicy, so we used canned diced green chilies. The meat is tender by the end - great for burritos. Lots of liquid left over. I might add less next time.
