I had a can of Coco Lopez lite hanging around so used it for this. Left out the coconut. Served Almond Joy-ish. Scooped ice cream and drizzled with ganache then sprinkled with toasted chopped almonds and toasted coconut. Delish! EDIT: Made again with full fat Coco Lopez and just half and half. Worked great.
I did this with previously steamed lentils instead of meat. I used a whole onion and only maybe a half cup of water since I didn't want lentils to go mushy. Also used yellow mustard instead of dijon, bumped up the W to 5-6 good dashes.
Didn't have poblanos so I added a couple of minced jalapenos, forgot the corn. All cheese inside and used 1.2 of ground turkey instead. Added a chopped up red bell and lots of black olive slices. Went back and forth trying to decide on half or full recipe. Went with full and so glad I did. LOVED it. And as I like to do, I drizzled with honey before eating.
Dd had recently requested pesto and BN had just mentioned her Warning! on the Buzz so I decided to give this a whirl. I had my head in a good book so I ended up mucking this up...over cooked my pasta a tad, over processed pesto, spinach wasn't really dry enough, not enough lemon juice (so I used all the zest of the one lemon I had.) Still, with my poor execution dd gave 2 thumbs up!
I used this idea on tilapia because dd prefers it to cod. Fresh diced tomato with sliced onions and garlic instead. Homemade version of "Boursin on a Budget" by covergirl. Served over lemon basil flavored cauliflower "rice".
Dd LOVED the honey, lemon, ginger combo. (I did add garlic) First bite..."Is there ginger? (I used fresh grated, all I had) Yum. This is so good! I like this so much better than the orange juice version. Make this A LOT more, ok?" Winner , winner, chicken dinner!
