Loved this! Try using Trader Joe's frozen roasted corn in place of the canned corn.Took the advice from other posters and used 1/4c. rice vinegar and 1/4c. lime juice.Served with Fritos Scoops chips.

When visiting Texas, I saw so many places serving King Ranch Casserole, so I was hoping to see what the fuss was about. Following this recipe to a "T", I made it for a bunco night along with pulled pork. Only 2/3 of the casserole was eaten, it didn't look very appetizing, and the inside was soggy and wet.When I pulled it out of the oven, I was thinking that it looked a little on the wet side, so I let it sit for 10 mins. thinking it would firm up. Cutting into it, it was very soupy. Also, I used a whole chicken from Costco (3 lb.), less the skin and bones of course, and I thought there was too much chicken. One of my friends said it was very vegetable heavy.Overall, just not that great, mushy, soupy and a funny color.

This recipe is super easy, and the cake turned out good, not great! I didn't make any changes to it, but going forward, I may try it with these tweaks: The cake itself was a little dry, so perhaps use one more egg to the batter, and bake a few minutes longer.The taste was good! For the icing, I thought that 4 cups of powdered sugar seems like alot, and if you don't work fast, the icing tends to set up and thicken a bit before it can spread over the cake. I would sift the powdered sugar as well, so you don't get funny looking lumps in the smooth frosting. Especially if you go without nuts in the frosting, if you do use nuts, the lumps blend in.The recipe fits perfectly in the pan, with enough room for the icing. Great for parties!

I made this exactly the way the recipe stated, but for my liking, it was too crumbly and didn't hold up when sliced. I was looking for more of a 'bread' that i've gotten at Irish restaurants, this was more crumbly and scone-like. I did have to add a couple of Tablespoons extra of buttermilk to get the dough to form into the round, as the dough was so crumbly with just the 1 c. buttermilk.Tasted really good, and would make a great biscuit, but not what I know Irish Soda Bread texture as.

Easy recipe, but i'm used to more "zip" in the marinade, more vinegar and depth. Perhaps double the recipe for the sauce next time.

Delicious and so easy! It wasn't overly spicy or tangy, just right. Made it served over mac and cheese and the flavors both married well!
