Goofy Gramps

After steaming and masking the squash, I was concerned that there would be too much liquid. Coming out of the oven, it looked perfect. If it tastes anything like it smells, I may have to hide it before it’s all gone!

This is an excellent and quick alternative to making an Alfredo sauce. For my taste is the garlic is fine; but I wouldn’t go out on a first date after eating it!! Subbed light cream and evap milk for the heavy cream.

This is very tasty. The title is a little deceiving; next time I’ll probably use 2 poblano peppers - they seemed to get lost in the chowder! I added some carrots to the onion-celery purée. I used frozen corn and added a little more cream and slightly increase the roux to make up for the creamed corn. I under-salted it. I used a newly harvested Hungarian red pepper from my garden as the hotter spice. Who needs potatoes in a chowder like this? The texture is so thick and creamy rich. I might substitute andouille sausage for the shrimp next time. And there WILL BE a next time!

I recently saw a cooking show where cooks were encouraged to seek and find “soon to expire” fresh and canned vegetables. So used 2 cans of diced tomatoes and a can of black beans [washed & drained]. We are not big sausage eaters, so I found a sausage recipe and extracted the spices [marjoram leaves, cloves, brown sugar]. Added some salt and pepper. Nice soup for a cold, wintry day. And pretty healthy, too.
