I made this today while on pandemic self isolation... OMG it is amazing. I did not make the frosting but instead chopped up some left over truffle chocolates and sprinkled them on top. Excellent recipe and as easy as the video shows.
Yummy. I made it with leftovers cooked ham cut up, and mashed potatoes from my freezer and added fresh onion and carrots (didn’t have Thyme or bacon, celery) and it was still awesome.
I used salsa instead of enchilada sauce, no garlic, combo ground beef and pork (cheaper), chili seasoning instead of taco seasoning, I added broccoli, cauliflower, mushrooms and yellow peppers and cut up canned mini corn spears as we had no frozen kernels. Lastly I added shredded cheese into the mix, on the taters as well as on top. And used salsa because I had no enchilada sauce.
