Love this recipe! I make it exactly as stated except I do 2 cans chili beans and 2 cans spicy chili beans, and I add 4 tablespoons liquid smoke. I also make it in a slow cooker: I brown the meat and chop all the veggies the night before, then add everything to the slow cooker the next morning and cook on low all day. It all barely fits in the slow cooker!
I used some other viewers suggestions... Didn't boil the chicken; instead pan seared it with S&P & EVOO, cooked a whole box of stuffing, used 2 cans of condensed soup (cream of chicken & cream of mushroom), subbed half a cup of milk for the mayo, and mixed all ingredients (cubed chicken, sautéed broccoli, stuffing, soups & cheese) together in a big bowl prior to baking. Fantastic! Served with a side of brown rice.
I also increased the peppermint extract to 2 tspns as other reviewers suggested, and I also could not find chocolate cream cheese, so I made my own by doing the following: melting 1 cup semisweet chocolate chips in the microwave for 1 minute, and then stirring the chips until they were liquid and smooth. I added the melted chocolate last and gradually, while beating on low. Oh, and for the crumb crust, I used chocolate graham crackers that I pulverized in a ziploc bag with a hammer. Just popped the cake in the oven, so I will have to update this review once I enjoy it with my family tomorrow! It looked great though and the batter tasted good. ;)
Made this recipe yesterday, but I had to double it because I make a weeks worth of meals ahead of time. So yummy! That being said, after an hour of simmering the rice, it still had a hint of crunch to it but the chicken broth was all evaporated/soaked up. Next time I will try adding about 4 more ounces of broth and simmering a bit longer. Really love the flavor though! And that the recipe uses brown rice - finally!!!!
I used this recipe to make meatloaf with moose meat. It was great! Changes I made: Instead of the saltine crackers, I used about a 1/2 cup of store brand bread crumbs. And instead of laying bacon over the top of the meatloaf, I half-cooked two strips of bacon, chopped them up, and mixed them in with the meatloaf. I think I ended up baking it about 50 minutes total... Not sure why...
