Very good recipe. I soaked the banana slices in pineapple juice for 25 minutes first and that kept them nice and yellow in the finished loaf. Very tender, moist, and yummy!
Good flexible recipe! I didn't have buttermilk but did have 1/2 cup full fat yogurt so I used that + 1/3 cup oil to keep the same general liquid amount + a splash of vanilla. I also reduced the sugar a bit and used some brown and some white since I wanted to make sure the baking soda activated without the buttermilk. After an hour I had a beautiful aromatic loaf with a caramel brown crust. Very yummy!
Sadly this method won't work with induction cook tops. I wondered, since the burner doesn't hold heat once turned off, but tried it anyway Lol. The water isn't hot enough by itself to cook the eggs. It makes a fab soft cooked egg though!
