This was soooo good! I used olive oil and oregano to flavor the potato. Another reviewer added a tip to place a bit of water in bottom of plate to prevent drying out and it worked. Will be cooking another one tomorrow.
I followed the recipe and only changed the serving size since it was just for me. It tasted even better on day two. Will definitely be making this again.
Yummy! Adjusted the recipe to 35 servings the first time for my son's school event. The second time was even better with an adjustment to 6 servings just for me. I did not make any substitutions in the recipe. The crunchy texture of the pecans complements the sweet potatoes and sugar. This will definitely become a go-to dish for gatherings.
