Will definitely make again. Added asparagus, chopped carrots (2) and 4 cloves garlic plus a roux to thicken. Also substituted butter for the bacon. Chopped everything into small pieces so each spoonful held all flavors. Did not peel the potatoes. Garnished with shredded parmesan cheese.
Used leftover, sauteed halibut and added asparagus, a pint of heavy cream (no milk) and a 6 oz package shredded asiago/parmesan instead of the cheddar cheese. Also, added 2 tablespoons Old Bay seasoning. Delicious!!!
This was delicious af. I only had dry herbs - dill, herbes-de-Provence and thyme. I did add shredded parmesan (1/2+ cup), powdered garlic, plus double the amount of olive oil to the mixture. First coated the fillets with EVOO and a little Tumeric for the health benefits. Misread the instructions and baked for 30 minutes but it came out nicely browned and was quite delicious.
This recipe was easy to prepare after taking the advice of other reviewers and doing a 1 1/2" to 2" chop on the veggies instead of dicing them. For added flavor, I used 1 1/2 large red onions, 5 garlic cloves (whole/crushed), 6 carrots, 3 Yukon Gold potatoes and a parsnip. There were so many veggies in the pot the roast was near the top of the Dutch oven. Also, didn't have rosemary so threw in about 8-10 stems of fresh dill. It came out great.
