I have not made this recipe yet but I did a search because I was craving what my Mama used to make. She called these by the same name but ours had a whole slice or three of onion on them (three on mine because I love onion). So glad that someone posted this and that I am not the only one eating them.
I made this soup yesterday and the flavor was amazing. I did not use lemon zest because I was out of lemons. I also substituted spinach for the escarole. I didn't really care for the orzo as the soup I'm used to eating has pearl pasta. Next time I will use the pearl pasta. my family devoured this soup. I will be making this again and am saving this recipe!
