This was my first time having Mahi Mahi and coconut rice. This pairing was excellent. I used Newman’s Mango Salsa instead of making from scratch. The fish was tender and juicy and the marinade really brought this dish to life. Thank you!

Great recipe, I used chicken instead of pork (not a pork eater) and added eggs which is a staple in fried rice. Absolutely loved it...

The sauce tasted better on the salmon instead of the cauliflower. The Thyme took away from the flavor for me. Will make the sauce for the fish again without the parmesan & Thyme.

Awesome taste, I only used andouille sausage, not fond of hammocks. Added can of chili ready tomatoes to give it a zesty flavor. Very delicious!
