I made 1/3 of the recipe since it was only me who would be drinking it. My grandmother used to make Rompope adding the rum to the adult servings only. That way us kids could also drink it. Make sure you stir constantly because it can stick to the pot and burn very quickly. Thanks for sharing this delicious recipe.

I think this casserole would be better if the bell pepper was sautéed prior to adding to the dish. I did not care for the crunch. It came out extremely soupy and next time I would reduce the broth to 1/4 cup or totally eliminate it. There’s more than enough liquid with the can of Rotel. I doubled the cheese because I wanted it cheesier.

I seasoned the chicken with salt and pepper before dipping in milk. I subbed the pimentos with mushrooms because that’s what I had. Other than that I followed the recipe. Very easy and quick to make. I thought it was very good but hubby didn’t care for it.

I believe the calorie count on this is wrong. Two tbs of cream of coconut have 240 calories and this smoothie calls for a quarter cup. That’s twice as much in calories, making it 480 calories for the cream of coconut alone! Needless to say I only used 2 tbs of the cream of coconut. All my fruit for the exception of the kiwi were frozen, eliminating the need for ice. I added 1/2 cup of almond milk because it was so thick. Though tasty, I don’t think I will make it again because of the high calorie count.

I made only half of the recipe and it turned out pretty tasty. I always flash freeze fresh berries and that's what I used. Thanks for sharing your recipe.

Just like other reviewers stated, too much pasta, too much garlic, too many bread crumbs, too much lemon. I'm glad I used half as much pasta, garlic, lemon and a quarter of the bread crumbs. I added salt, pepper, red pepper flakes and a sprinkle of parmesan cheese. This was ok with these modifications but as written I don't think we would have cared for it.
