This is a great recipe for high altitude. It's my first batch of cookies in my new convection electric oven so I'm still learning it. Cooked at 300° for 20 minutes when dough was chilled.
I also added 1 tsp of espresso powder. Will do 2 tsp next time.
I can't find the pre-mixed seasonings so I did my own thing. To make the sauce I used a small amount of olive oil (maybe 1 tbsp), the juice of 1 lemon and 1 lime, and some Lemon Pepper seasoning I had from my local Savory Spice Shop.
This is my go-to recipe for a fast pasta dish after work when I want to cook something tasty and good for me.
I'm only rating this a 4 star right now since I've not tried any others. But I found this one and it's amazing even before we start tweaking it. We found it a little too sweet, but think that might have been because we used Contadina tomato sauce. We're trying it with Hunts tonight to see if it's mellower on the sweet. Then to tweaking!
