Fantastic recipe! I used basil and oregano for spices and i used beef broth because it was all i had on hand. Also, I added about 1/4c of ketchup to enhance the tomato flavor. I couldn't stop eating this soup! Thanks for sharing !
i have made rice pudding many times but couldn't locate my previous recipe... i think the 'half gallon' of milk measurement is slightly off... i only used 6 cups of whole milk and at the point when my rice was completely cooked the mixture wasn't very solid so i tempered and added the egg mixture with 18% cream instead of more milk... it's trying to thicken up now. It' been simmering on the heat for 2 hours already and still counting.... it smells and tastes delicious so I'm hopeful!! next time i'll use 4 cups of milk, 1 cup of rice and 3 eggs (i added an extra egg this time to help it set up).
this recipe does require a few tweaks to get the cheese sauce just right (less milk and less flour) I would also add salt and pepper to the mix to give it the appropriate cheesy zing but it was definitely a good place to start and I really enjoyed the cauliflower!!
I am not sure why i found this dish a little lack lustre, it could have been my choice of taco seasoning (low salt variety, yuck) and the tortillas that i stirred in were soggy and everyone fished them out. It was quick and simple to throw together so I would definitely try it again and serve it with tortilla chips for scooping!
