I am dairy-free so instead of the greek yogurt I used unsweetened plain coconut yogurt. The batter was a little runny, probably due to the less thick yogurt but they turned out so good!
So delicious! I love that this recipe was sugar-free and sweetened with stevia. I didn't need to add maple syrup. I added a side of fresh fruit and it was a perfect breakfast
I made this recipe just for the meatballs. We are gluten-free at our house so the bread wasn't really an option. Instead I served the meatballs with sliced cucumbers, tomatoes, and roasted potatoes and a lemon tahini sauce (not pictured). I used GF breadcrumbs for the breadcrumsb int eh recipe and had no issues. Great recipe! I'll be making it again!
This recipe was so easy to make! It was full of flavor even though the receip calls for minimal ingredients. I added tzatziki sauce on top of mine and served with roasted potatoes. This will be added to the work week dinner rotation.
