I made the corn by baking with husks on (trimmed) at 350 for 30 minutes (which is the best way I have ever found) then shucked the corn and used butter, the mayo/lime sauce. Also a mix of grated Parmesan/Romano cheese before topping with the spices. We LOVED this recipe!

I followed the original recipe (used my own taco mix-from this site) We adored this recipe.

I use this recipe frequently, adding red pepper flakes. The only thing I do differently is to heat all of the ingredients in the slow cooker before adding chicken. Why dirty another pan when the cooker will need to be cleaned anyway?

Next time I will saute the onion, since the raw flavor was overwhelming. Other than that, we really enjoyed this recipe.
