I couldn't quite crisp them in the oven at the end like the recipe suggests because the sauce started smoking but I think that was my bad for not letting more sauce drain out from the spoon prior to placing them on the pan. Flavor was delicious!!

I made it almost as the recipe stated except I cooked the chops more quickly. I didn't take them out after browning them, but instead added the onion, garlic, and other seasoning in after flipping them at 5-7 minutes. Then I added the tomatoes and let it simmer 15 minutes, then the mushrooms and peppers just to soften them a very little bit. It was SO flavorful! And I had read from others that the pork was bland so I seasoned them a little before cooking them with oregano and garlic.

The salad was light, easy, and great the next day as left overs! Saving this to make again and again for SURE!

So so good. Perfect as is OR I muddled in some mango and that was divine too!! ?? yum!
