Directions

Cut kernels from corn. Bring coconut milk, curry powder, and ginger to a boil in a saucepan. Reduce heat and simmer until mixture is reduced and slightly thickened, about 5 minutes.

Stir in corn, salt, and pepper. Bring to a boil; reduce heat and simmer, stirring occasionally, until corn is tender and mixture is creamy, about 10 minutes. Garnish with fresh cilantro and additional curry powder.
