Ingredients

  • 8 ears fresh corn

  • 1 (13 1/2-ounce) can light coconut milk

  • 2 teaspoons curry powder or garam masala, plus more for garnish

  • 1 teaspoon finely grated fresh ginger

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon freshly ground black pepper

  • fresh cilantro for garnish

Directions

  1. Cut kernels from corn. Bring coconut milk, curry powder, and ginger to a boil in a saucepan. Reduce heat and simmer until mixture is reduced and slightly thickened, about 5 minutes.

  2. Stir in corn, salt, and pepper. Bring to a boil; reduce heat and simmer, stirring occasionally, until corn is tender and mixture is creamy, about 10 minutes. Garnish with fresh cilantro and additional curry powder.
