Olive Boursin Spread

This olive Boursin spread is creamy, delicate, and indulgent, and you’ll see this gourmet cheese appetizer disappear quickly. If you have any fresh oregano, it’s a nice garnish. I typically serve as an appetizer, but this also makes an unforgettable grilled cheese sandwich.

Ingredients

  • 2 tablespoons pitted Kalamata olives, drained and roughly chopped

  • 2 tablespoons pimento-stuffed green olives, drained and roughly chopped

  • 2 tablespoons oil packed sun-dried tomatoes, drained and roughly chopped

  • 1 (5.2 ounce) package garlic & fine herbs Gournay cheese (such as Boursin®), softened

  • 1/2 fresh lemon, zested and juiced

  • 1 1/2 teaspoons olive oil

  • 1/4 teaspoon dried oregano

  • freshly ground black pepper to taste

  • 1/2 cucumber, sliced 1/4-inch thick

  • crackers, any kind

  • fresh oregano leaves (optional)

Directions

  1. Combine Kalamata olives, green olives, and sun-dried tomatoes in a small bowl.

  2. Add Boursin, lemon zest, lemon juice, olive oil, oregano, and pepper to a bowl, and stir until well combined. Gently mix in the olive mixture.

  3. Place a cucumber slice on a cracker, top with a dollop of spread, garnish with an oregano leaf, and serve.

  4. Leftover spread may be stored in an airtight container in the refrigerator.
